Has anyone extracted info by placing the phone in this mode? Can I trust that it is network free?

I have done this several times and always been safe from network connection, it also means you cannot use the Bluetooth capability as no signals will be received or sent

Many of the mobile phone best practice guides list it as an acceptable method. Just remember the three D's document, document, document. Record any changes you make to the handset.

Just a note some Samsungs are still able to connect to the network in "Offline mode" (SGH-G600 and SGH-J600) I have seen it on.

kevinspoon, as an observation I can give you as much comfort as possible and you trying taking that to a court of law and saying person x said it was okay so I went ahead and did it.

The observations of the other contributors are worth noting, however, are you in a position to run a number of simple tests on a test mobile?

A big thanks to all of you for your comments and advice.

Trewmte, I have tried a few other options and this would be a last resort.

Also, I agree. Documenting everthing I do is an excellent idea, seeing that there is a great possibility of data data being changed.
