Can anyone recommend some good phone forensic courses to cover all bases, for analysts who've been in the computer forensic world for several years?

A company called Control-F would be a good place for you to look. They run a wide range of phone forensic courses. You could also try NPIA if your LE. Both run manufacture non specific training at different skill/knowledge levels.
You mentioned touch all bases.
1) There are varying vertical courses eg
- SIM/USIM
- Mobile/Smart Phones
- Cell Site Analysis (CSA)
- Call Record Analysis (CRA)
- Network Analysis
2) Or are you looking for horizontal courses across the same technology strata
eg Mobile/Smart Phones - training by handset reading tools or by make/model
3) There are then courses or modules containing forensics practices, processes and procedures that can be applied to mobile evidence acquisition and content harvesting.
